Health Recipe: Huevos Rancheros


You'll need:
1 can (15 oz) low-sodium black beans, drained
1/4 cup fresh cilantro sprigs
1 clove garlic
8 large eggs
1 can (16 oz) whole peeled tomatoes, with juice
1/2 small onion, chopped
1 canned chipotle pepper in adobo sauce, minced (about 1 Tbsp)
Juice of 1 lime, divided
Pinch of cumin
8 soft corn tortillas

How to make them:
Preparation of tomato sauce, onion, pepper, chipotle chili pepper, the juice of half of the coriander, lemon and garlic in blender. Pulse and blend well, but still slightly crisp. Season with salt and pepper. Let stand at room temperature, while the rest of the meal may not have time to taste.

2 . In a small bowl, blacks beans with cumin and remaining lemon juice. Season with salt and pepper. Using back of fork until just mashed beans, water, if it seems too dry, mix, Hot Shot.

3.  Coat pan with pan spray and heat over medium heat. Crack eggs into a pan and cook until they are white but the yolk still liquid. Place another skillet over medium heat tortilla and bread for about 1 minute on each side.

4. Spread on tortillas and top with warmed beans with eggs and tomatoes. Serve immediately.
